1 lb hot italian turkey sausage ( I use Jennie O)
2 sweet bell peppers ( I use 1 yellow and 1 red) sliced
1 medium onion thinly sliced
salt and pepper to taste
3/4 a cup of beer ( i have used Blue Moon- Rising Moon or Shocktop but anything you have works)
2 tablespoons of olive oil
Preheat the oven to 400 degrees
In a large ovenproof skillet (no plastic handle) brown the sausage all over, about 10 minutes. Poke each one a few times to release some of the juice.
Remove the sausage and set aside.
Add the olive oil and the onion. Cook till mostly translucent.
Add in the peppers and season lightly with salt and pepper.
Cook until wilted and starting to brown and then add the sausage back into the pan.
Pour the beer into pan and bring to a boil, place pan in the oven.
Cook until most of the liquid is evaporated, the peppers are tender and sausage is browned (about 25 minutes)
***if you want you can serve them on some garlic sandwich rolls or ciabatta bread.
